Today I am blogging something that I am incredibly passionate about.... FOOD! I love healthy food and I love to creatively cook food. When I am in the kitchen, I am in my happy place because I get to put positive intentions into the food I make. The intention I always have when I cook is to create a meal that is not only delicious but incredibly nutritious. When I eat a whole foods plant based diet I know that my body is going to be functioning properly like my mind motivation, digestion, skin, hair, nails, mood, muscle recovery, pretty much everything. I personally love to eat simply because too many flavors and oils can make my belly hurt or make skin unhappy.
In this post I have included pictures of what I ate today and what I have eaten on other days. I wanted to be sure I had pictures for break-fast, brunch, lunch, dinner, snack since that is how I eat. I want to be as real and raw with all of you as I can.
I do eat a whole foods plant based diet but I also like to create desserts and sometimes they include an ingredient or two that are processed. I also would like to mention that I am not perfect and last week I ate a pint of Ben n Jerry's non-dairy PB n Cookies... sometimes I slip up and have bad eating habits. But that is OK right now because I am so much better than before and do not eat quite as much processed foods compared to a few months ago. Every time I do, my skin breaks out immediately. Its an instant learning lesson which really is a blessing:]
One more thought I wanted to mention, I currently live on a farm in Hawai`i so I only have a stove to cook with. These meals are really simple...
5-6 AM. Right when I wake up I start drinking water. What ever I have in my bottle I try to finish before I am really ready to get out of bed.
7-8:30 AM. So every morning I BREAK my FAST, I have fruit. Either papaya or mango and then usually bananas and if the farm has jackfruit I try to eat that because so yummy. I like fruit because it digests quickly and tastes so delicious. As I was a little girl my dad would make me chocolate chip eggo waffles with syrup and I would drown it in maple syrup. I naturally love to have sweet food in the morning because of how I grew up and the choices I got to make. Now I have replaced that bad habit of processed sweets in the morning with have fresh fruit and enjoying the fructose instead;)
9:30-10:30 AM. This is what I call brunch. I love to eat oats after fruit because it also is really great for digestion, filling, and tasty. I like to eat a lot, sometimes a 1 cup of dry oats, I do not usually measure but that about how much I usually eat. Then I add a few tablespoons of chia seeds because high in protein and filling. I love walnuts in my oats for a yummy crunch. For flavoring I add in cacao powder, cinnamon, either almond or peanut butter, agave, and banana or raisins (not pictured). I pour boiling hot water on top and let it soak. Then I will eat warm or if i make it ahead of time I refrigerate and then I have cold oats for brunch.
1-3 PM. Late lunch is usually what I eat, not really sure why but this is what my body likes to do. I always listen to my intuition and be mindful of what my feels its best for it. Lunch is usually a soup of some sort. Some times stir fry but lately soup, specifically kobocha squash soup with veggie scrapes. On the side I had poi which is taro root and water. I had a about three or four servings of the soup, I eat until I feel full.
5:30-8 PM. I have been on a coconut lentil curry kick lately. I love making a huge batch and then eating it for the next two to three days. Basmati rice on the side of course. I can eat two-three of these bowls forsure. Yummy. Lentils and potatoes are super filling which is perfect for the end of the day.
8:30-9:30 PM. These are my snacks lately.. island style in my opinion but I love it. In the first photo I made chocolate sauce with coconut oil and cacao powder and ate it on top of fresh coconut. The other picture is gram cracker crumbs, walnuts, fresh coconut, nut butter, canned coconut milk, agave.
